Northern Hotel’s chef brings personal touch to new role

Executive Chef Ian Anderson took the reins of the historic Northern Hotel kitchen more than a month ago, and already there is a new pulse. Some time had passed since I’d stepped into Bernie’s Diner, the Northern’s breakfast-and-lunch cafe, and it was quieter back then. On this Wednesday morning, behind the counter, staff busily filled cups of coffee and gathered plates of food for the customers who filled the seating by the west-side windows. A New York coal plant’s lessons for Colstrip

Compared with the coal-fired power plant in Colstrip, the Huntley Generating Station in Tonawanda, N.Y., was not all that large. At its height, when all six units of the Huntley plant were operating, the power station could generate up to 598 megawatts of electricity—compared to a capacity of 2,094 megawatts at Colstrip’s four units. Taste of Billings: 5 questions for TEN chef Wally Bone

The second annual Taste of Billings, featuring two nights of fine dining at the historic Billings Depot on Montana Avenue, is set for Friday and Saturday, Feb. 5 and 6. The Saturday night formal dinner will feature a seven-course meal, each plate paired with a wine. All proceeds will go to support the nonprofit Billings Depot. 1 for the home team: Chef at Northern beats Bobby Flay

With a calm, collected and often playful attitude, Northern Hotel Executive Chef Tim Freeman took on celebrity chef Bobby Flay in a culinary showdown and came out the victor. The Food Network show, “Beat Bobby Flay,” aired Thursday evening, and the Northern held a special screening party to celebrate Freeman’s victory. Northern chef takes culinary skills to Bobby Flay show

Tim Freeman, executive chef at the Northern Hotel’s TEN restaurant in downtown Billings, wasn’t a fan of Bobby Flay growing up. In Flay’s television shows and in his best-selling books, Freeman said, he came across as arrogant and cocky. After private unveiling, Big Dipper to open within days
